    Yep, it smells and tastes like October. :)

    7 hours in the apple wood smoke, 120 for the first few hours then bumped it up in heat every hour towards the end. No rinsing using the mostly sugar brine, never have to worry about over brining.

    Strayed from my usual methods. Trying to get something more like that bright red Salmon Candy. 50 hours brined in 2lbs brown sugar, 1/4 cup soy sauce, ginger powder, 2 cups real maple syrup and a little bit of sriracha, pieces lightly sprinkled with sea salt before going in.





    Have another batch that is just brown sugar and maple syrup. Bottom pic is of some of the teriyaki Jerky strips I plan to do out of the buck I caught yesterday.





    Will update after it dries for 24 hours then smoke it.










    Scored the thicker slabs so they'll dry out more evenly when smoked.

    I smoked the 30#-er I caught last week. Oh so good with Gouda cheese, crackers and red .

    This was one of the most pleasant threads I have read. Fantastic pictures, great recipes. I am sufficiently motivated to go dig out the ol' lil chief and make this the year of the smoked salmon(and winter steelhead). Thanks!
