View Full Version : How to fillet a salmon?

Now that I have caught a couple salmon and very new to fishing could someone direct me in the art of filleting a salmon correctly. I see these pics of fillets in the forums then I take a look at my fillets and say to myself "what happened to the fish did it go through the grinder" lol. Help needed.

fins, this is how we do Chinook over 30#:

I like to gut them first, the above method gives you the maximum meat. If the fish is smaller, I gut it, then just cut behind the gills towards the backbone, then turn the knife and slice down the backbone to the tail. Flip and repeat. Probably some vids on youtube you could check out.

Check out youtube, as suggested. There are plenty of instructional vids on there. I used to have the same issue, I'd look at the fillet and then at the meat left behind and wonder what happened. Watched a couple vids and while I'm not an expert, I'm getting alot more of the fish to enjoy.
#1 most important thing is a very sharp knife

Here's how I do it. I walk into Lake Safeway, reach into the meat cooler and pull out the fillets......Jetspray
