Hickory and mesquite go fine with beef, but too strong for fish

Hard to beat alder, if it was good enough for the natives, it's good for me too.

My wood choices are:
Alder for fish
Apple for pork
Hickory for chicken
Hickory or mesquite for beef

I haven't played with cherry much at all. Sounds like I will have to give it a shot.

For ribs I like to use hickory mixed with rosemary branches. We have rosemary on the property and I use the woody branches for smoke. Mmmmm

Hey all, what's your favorite type of wood for smoking salmon?
At some point it is not the type of wood used but too much of it. I also add a steamer tray in a dry type smoker with some aromatics added (like wine, lemon peels, orange peels, lime peels). There is also the brine recipes to consider. It is mostly a testing of flavors that you may like. Remember, too much smoke will make you choke, and many others may not enjoy what you worked hard for.......Jetspray
