Fillet & skin 3 small kokanees
Pan-fry them as if they were hamburger for tacos.
Add taco seasoning, cajun spice, garlic powder, salt & pepper to taste.
Set that in a bowl to cool.
Mix 3 eggs, add finely chopped onion & fresh garlic, diced celery, mix well.
Add fish to egg mixture, mix well.
Then add about 3/4 cp seasoned bread crumbs.

Form into patties and pan fry in a little olive oil. YUM!!

I mixed up a sauce with Greek yogurt, dill, wasabi powder & chinese hot mustard powder.

Good recipe I think I will try it on some Eagle Lake trout (pre-smoked).....Jetspray
