Sportsmen,

I am lucky enough to have a regular supply of fresh Amador trout and the smoked fillets have been well received as gifts to friends and extended family.

But one winning recipe is not enough and I would like to prepare some recipes to win over my immediate family's feeling that they would rather eat something else when I say we are having trout for dinner. * ;)

I would appreciate if you might share your best recipe for large trout.

this has worked out well for me.

fillet out the trout. If the fillets are large, cut them into smaller pieces.
Marinate them in Lawry's 30min marinade. I like the Dijon and honey w/lemon juice. And I usually marinate for an hour or so.
Dredge the marinated fillets through seasoned bread crumbs. Here, I like to use the progresso italian style.
Pan fry them in hot oil for about 4 minutes to a side. Cooking time needs to be adjusted depending on how thick the fillets are.

My wife normally has tartar sauce with her seafood/fish. With this, she justs dives in. Nothing extra needed.

I can't remeber where I found this but it is worth a try.

Almond Fried Trout

1/4 cup all purpose flour
1/8 teaspoon peper
1 egg
3 tablespoons milk
1 cup cracker crumbs(saltines)
1/2 cup sliced almonds,coarsley chopped
1 1/2 lbs.trout fillets,about1/2 inch thick
2 tablespoons margarine or butter
1/4 cup plus 1 tablespoon vegetable oil * *
4servings
Heat oven to 450 degreeon plate or waxed paper,mix flour and peper.In shallow plate or pie plate,blend agg and milk.On another ploate or waxed paper,mix cracler crumbs and almond.Cut fish into serving size pieces.Coat fish with flour, dip in egg,then coat with almond mixture,pressing lightly.

In 13X9 inch baking pan,combine margarine and oil.Place pan in oven for 5 minutes to heat oil.Add fish,turning to coat with oil.Bake 5 minutes. Turn fish.Bake until golden brown and flakes easily at thickest part,about 5 minutes.Drain on paper towels.Serve with leomon wedges if desired.

This is good with any kind of fish.

I like trout almandene(sp). Take 3 rainbows 2-3 lbs each, and fillet the fish or just make some slits on each side and season with kosher salt and pepper. Bake fish at 350 in a baking dish with a splash of white wine (or beer) and some fresh tyme lightly sprinkeled over top the fish.Cover the dish with foil and bake between 15-20 min. In the last 5 min, use a sautee pan and heat (dry) 1 min, then add unsalted almond slivers and toast 1-2 min and remove. to the pan add 1/2 stick butter and when melted and 8 oz heavy cream and whisk on med high heat for 2-3 min, finishing by adding a pinch of nutmeg(1/8)tsp and almonds back to sauce.Plate fish over rice and add sauce.Garnish with fresh choped parsely and a lemon wedge.Very easy,super good!! ;)

If you want to cook them on a BBQ try this one, it is TERRIFIC!.
You will need:
Glass baking dish to marinate fillets in
Hamburger basket for grilling. (allows you to turn the fish over without sticking to the grill)
Basting brush
Seasoning salt
Granulated Garlic
Lemon pepper
Fines herbs (Pricey, but a must)
Dry minced onion
Butter
Lemon Juice
Pam spray
2 pound + trout

Fillet the fish .
Remove skin.
Remove the rib cage bones.
Remove the fat line from the top of the fillet.

Lightly sprinkle the skin side of fillet with the dry spices listed above
Put the fillet in the baking dish skin side down, & season the top of the fillet as you did the skin side.
If you are preparing more than one fish, put plastic wrap between the layers
Cover dish with plastic wrap, & place in fridge for 12-24 hours.

Heat the grill, & then turn the burners to low.
Pam spray the hamburger basket
Place fillets in basket
Melt 1/2 stick of butter in microwave & add 1 tablespoon lemon juice to it
Place fillets on grill for a few minutes, & then turn over
Baste with butter/lemon mixture
Turn over, & baste other side
Now just turn the fillets about every 3-4 minutes till done.
You can baste the fillets again if you have any butter mixture left just before you take them off the grill.

You're gonna love the fish this way 8-) 8-)
