Fillet your fish and use a tuperware marinade container mix:

2 cups Teriaki
1 cup brown sugar
1/2 tsp red pepper
Fresh cracked pepper
1/2 cup soy sauce
1 tbls Dill
1 fresh squeazed lemon

Marinate overnight about 24 hours

Smoke with Hickory and Cherry Chips

Does the dill flavor come through? I wonder how it would be with cilantro?

If you want more dill flavor, put pieces of fresh Dill right on the fish and into the smoker.

I have cut out the addition of salt and use the soy for the sodium and it tastes so much better.

I use this on Tuna also. I put some Ahi in that I caught in September and Wow !
