View Full Version : A Striped Bass Recipe

This is not my invention - I've had it hand copied from somewhere for ages - it looks Sicilian, maybe? and it's good!

3-4 lb striped bass
1/4 C pine nuts (pignolis)
1/4 C butter (or preferred sub)
1/2 C sliced white leek
1/4 lb chopped mushrooms
2 med carrots, grated
1/2 C raisins
1/2 red or green sweet pepper, chopped
1 C chopped cooked shrimp
1/2 C small whole stuffed olives
salt & pepper
3 T melted butter
3 T olive oil
1/2 C Brandy, separeted into 2 *x 1/4 C

Saute pignolis in butter, remove when lightly browned.

Saute in same pan, leeks & mushrooms till tender (not browned) Add carrots, raisins, & peppers *- cover and cook low about 5 min. Stir in shrimp and olives, and season with salt & pepper * * * * * * * * * * * * * *

Put fish in roasting pan, skin side up, pour butter, oil, and 1/4 C brandy over. Salt and pepper. Bake uncovered, 400 degrees x 15 min. Add veg and shrimp mixture over fish, sprinkle with pignolis.

Heat rest of brandy, ignite, *[smiley=shocked.gif] and pour over fish.

(If your oven isn't on fire, congratulate yourself, and take 1/4 C brandy as reward *;D *;D )

Bake till done, basting occasionally.

When done, serve, enjoy - it's beautiful and tasty. And even though it sounds complicated, it really isn't - fish, a bunch a stuff in the saute pan, pine nuts, and a bit of fire *- bake and vwa-la! * [smiley=yahoo.gif]
