Picante de papas, peruvian cuisine.
(Potato picante)

Ingredients

1- lb potatoes
1 Aji or jalapeno pepper (for the brave, sub with tai peppers) [smiley=evil.gif]
aji amarillo

teaspoon turmeric
4 table spoons olive oil
cup of onion diced
cup tomatoes diced
3/4-cup water
1/3-cup Parmesan cheese
1 slice white bread
1 egg yolk, beaten
1 small clove of garlic
3 tablespoon grated walnuts
Salt
Black pepper
1 hard-boiled egg, sliced.
4 calamata olives, sliced.

For 6-8 servings

Potatoes
Boil potatoes in a pot with water. It usually takes about 15 minutes to cook for small size potatoes and may be 20-30 minutes for larger ones. Do not overcook or the potatoes will get mushy and fall apart. Peal and cut to slices after its cooked.

Sauce
Seed and de-vine the jalapeno pepper. Then make a paste out of it along with the garlic, bread, water, turmeric and walnuts with a blender. Let it be there for now.
In a frying pan fry the onions and tomatoes in the 4 tablespoons of oil till the onions are slightly clear then add this to the blender and puree. Boil the puree in the frying pan again and add salt and pepper to taste. Mix well and remove off the flame and add the egg yolk and cheese. Mix well again.


Pour this sauce on top of the sliced potatoes. Decorate with boiled eggs and olive slices.

Doc,

Peruvian cuisine is very broad in variety. I am sure you'll enjoy it. I have a list of Peruvian places in the bay area. Let me know if you ever need it. ;)
