I have a question for all of you fish smokers out there. I saw recently some hard smoked salmon being sold at the farmers market in San Francisco recently - I think the guy called it Squaw Candy? What it remined me of was Salmon Jerky - it was very hard smoked. So I was wondering if anyone out there has made any of this - have a recipe and/ or directions? I can't afford to pay $25+ a pound for the commerical stuff and would like to try making it myself.

The real stuff is smoked for 10 to 20 days at low temperature in a smoke house.

Here is a much faster recipe:


Try it with straight alder. The liquid smoke adds enough flavor so the you don't need to mix in some hickory for a little kick.
