Eel with zucchini and smoked ham or bacon.
This is chinese food

Ingredients
1 zuchini, cut in bite chunks
1.5 lbs. of eel fillets, skinned and cut into bite size chunks..
¼ cup of shredded smoked ham or crispy bacon
2 table spoons of oyster sauce
3 table spoons of (cooking) rice wine
½ bell pepper (choose your color and cut in small bites)
1 clove of garlic (diced finely)
2 green onions (Chinese onions. sliced)
1 jalapeno pepper (optional, sliced)
1 tea spoon of sugar
½ tea spoon of black pepper
1 table spoon of corn starch
Salt as needed (note that the oyster sauce is salty.
3 table spoons of vegetable oil

Prepare the sauce by mixing the rice wine, corn starch, sugar and salt in a bowl and set aside.

Mix the shredded ham, eel, garlic and oyster sauce.

Preheat the frying pan with a high flame. When it is nice and hot add 2 table spoons of oil and sauté the eel and ham mixture in it for 4 minutes. Stir occasionally to get all sides. Stirring too much will cause the fish to release it’s juices and not fry properly so I would just do it 3 or 4 times.

Remove the eel from the pan and add the remaining oil, zuchini, bell pepper, Jalapeno and green onions and sauté lightly for 3 minutes. Add a little water if necessary to prevent overheating and burning the sauce.

Add the sauce mixture and when it comes to a boil mix in the eel and black pepper.

Serve in a platter and enjoy your meal!!
