My son got his elk up in Montana this year, and when we were butchering it, he asked about the brisket. I said I usually just put this in the burger pile, and he suggested that we try and cook it up. So I used the electric chainsaw to buzz up the ribs, and cut out the brisket to give it a try. It came out fantastic!! Take a look and give it a shot next time you harvest an elk!
