View Full Version : Sturgeon cleaning question

I was helping my buddy clean the fish we caught yesterday and noticed besides the red there and also some orange/yellow stuff along the meat around the spine and on the outside. Is the yellow stuff fat? and Is it ok to eat?
I know to cut off the red.

The yellow is fat. I'm sure you're fine eating it. There's no way you could get rid of all of it. I try to trim most of it off because it tastes different to me. Good luck.

Yes you can eat the yellow fat. I don't think it tastes bad like the red/ brown meat that tastes fishy.

I talked to a dfg rep he said a lot of the toxic chemicals that sturgeon encounter are stored in the fat (yellow stuff).Cut it off.He also said that mercury is low in sturgeon but that selenium is high.Just limit yourself on the amount of fish you eat from our area. :)
