View Full Version : dry it before u smoke it

one of the biggest mistakes guys make while smoking Salmon is they don't let it dry out first...after you pull the Salmon out of the brine and rinse with cold water pat it dry with a paper towel and let the Salmon sit in the air or sometimes i will set a fan on slow...its good:shocked: give it a try dont forget to rub some brown sugar and sprinkler on course black pepper

CJ you ain't joking.... it wont smoke well when it's wet...

I let all my fish set out and air dry for at least 4-8 hours depending on outside temperature, that's after I towel dry them, cut it into strips, twist it up in cheese cloth and hang it from from nails in the wood frame of the smoke house. It is very time consuming but well worth it.

Thanks for the complement.

All the shad I have caught were sent right back in the water. Sorry I have never done one. I know it can be done it's just a matter of finding a recipe that will work for you. When I say recipe I don't just mean the brine/mixture. I mean everything from the way you fillet it to the way you soak it, rinse or not rinse, dry or don't dry, how much heat, how long you like it in the smoke and how you cool it. Once you have it, you can tweak it and make it perfect or close to it for you.

you guys want to hear something funny? Remember when the Kings got cheated out of the.... well you all remember that game..

Well I had just fallen asleep:outcold: when my wife:gorgeous: shakes me and says someone is outside!! I just heard them knock over the smoker chip pans!!! I sat up.... ran to the door fling it open and a police officer was standing in my back yard holding his gun right at my smoker, he looked at me and then started to yell at my smoker, turns and looks at me again and then starts to walk up to it, opens the door.

Low and behold some guy running from the police tried to hide in it..:suesscat: good thing the police got to him before I did I would of smoked his ***

True story, Scouts honor.. just ask my wife she'll tell ya..

We can put lots of salmon in it!! Bring it on over, along with a few of those crappie fillets. we can have a fish fry while we smoke the salmon..

Yikes where do you live to have bad-ins in your yard thats scarrrry...you need to move to pioneer i have a place for you...make you a good deal all the privacy you want set up your smoker take 20 minute ride to silver lake catch fat browns and smoke away...yes this is a sales pitch...but i really do like your smoker

Our neighbor has one like that and his outside fireplace is a pot bellied stove with a dog enclosure (keeps the dog house warm). On the inside he has those rolling steel racks that Costco sells. He uses it for larger game and has a separate emitter for smaller stuff. It keeps the smells down too........Jetspray

I agree with everything, except that I don't rinse or even pat dry my fish, just lay them on a rack and turn on a big fan............works great and the pellicle comes out perfectly!!

Anyone ever smoked a gill? Seems like it would be ridiculously strong alone, but might make a great spread/dip mixed into cream cheese.

How are you guys viewing the pictures of the smokehouse?It says they've been deleted on the post where the pictures were.Am I doing something wrong?

I can't see the pictures either maybe something is wrong with photobucket. I don't know what a gill is but if it is a sturgeon then I had some that Fishbucket smoked and it was good. Made up a brine last night and today before I smoked some trout I quickly rinsed it then patted it dry. That you CJ it smoked quicker then usual. After a few hours I removed the skin and the meat attached to the skin was moist so I smoked the fillet's for about an hour and half more. Good Eat's!

I haven't had CrappieJed's smoked Salmon, but I have had his smoked Collins Lake Trout. It was just awesome!

thanks KJ...the salmon is award winning if i say so myself...we have a fest again and I can make it i will bring some salmon...as long as Smogguy brings that cold beer to wash it down
