This is my favorite way to enjoy all the fall vegetables. http://www.imhooked.com/forumsyabb/Templates/Forum/default/wink.gif

I cut up some butternut squash, carrots, celery, onion, parsnips, Brussel sprouts, red potato, turnips, and beets. About 3/4" chunks. combine in bowl and toss to coat with a good olive oil. Spread in an even layer on a cookie sheet covered with parchment paper, and sprinkle with sea salt and a little fresh ground black pepper..
Bake in a 400 oven for 30 minutes, turn veggies about halfway through.

I've used banana, and acorn squash, and have added Italian or zucchini to the mix. Seems to work with any of the hardy fall vegetables, leave out what you don't like, but you may be surprised.
We also top them with some chopped walnuts, and sometimes some finely chopped fresh rosemary and thyme. My favorite is just olive oil, salt and pepper.

Don't crowd then together, and leave them some room, otherwise they steam instead of roast.

Yeah, I feel the same way about the parsnips, they taste like a parsley stalk, but the wifey likes them.

It's kinda funny, as a kid, beets and brussel sprouts were a regular dinner menu item. I hated them both with a passion. Now I eat them all the time, and love them, Go figure.

I like to poor mushroom gravey all over them add some beef make good stew right there...oh ya:beer:

Looks great! I usually add an onion to the mix. The missus LOVES tossing it all in EVOO and sprinkling on a package of french onion soup mix.....Tastes great, but I can clear a warehouse the next day!

lol...that French onion mix can clear out anything

Try your olive oil, salt, pepper and sprinkle some fennel seeds in the mix. Great flavor!!

Sweet potatoes also add a nice flavor.
