Great on these warm summer nights!!

Barbeque Trout Salad

1/4 lb. Multi-colored Rotelle Pasta
2 Tbs. Olive oil
1/2 Cup Buttermilk
1/2 Cup Mayonnaise
1 1/2 Tbs. Horseradish
1/4 Cup fresh Dill, chopped
1-1/2 Plum (Roma) Tomatoes, seeded and diced
2 Tbs. Capers
1/2 Cup red Onion, thinly sliced
1 Trout (12oz.)
Salt and Pepper
Lemon Juice
Arugula
Alderwood chips

Barbeque trout with skin over Alderwood chips. Skin Trout and break into small pieces.

Cook Pasta, drain, rinse with cold water, drain mix with Olive Oil.

Combine Buttermilk, Mayonnaise, Horseradish, Capers, Dill and Red Onions to make dressing. Toss gently with Pasta and Tomatoes to combine. Carefully fold in Trout, season to taste with Salt, Pepper and Lemon Juice.


Serve on a bed of Arugula.

Man a fellow alderwood man, love the trout/salmon on that try some pecan too. I have about 15 variety's of wood to smoke, BBQ, or season with. One 48 inch gas smoker in stainless steel (Cabela's), one side box New Braumfels charcoal smoker, one 30 inch gas grill Makersmark from Sam's Club with stainless grills, infared back heat, infared side grill, rotisserie. I will give this recipe a try for sure thanks for posting......Jetspray
