Can't really call it tartar, but it is mayo based.

1.5 cups mayo of your choice (as long as your choice is best foods)
.5-1 small onion diced small
1tbsp DIJON mustard
Zest and juice of 1 lemon
2 cloves garlic. pressed or minced tiny
1 bunch dill chopped fine without too many stems
.5-1 jar capers chopped fine
Salt and pepper to taste.

This is very rough measurements, since I usually just wing it.

Mix all the good dope together and let it stand for a few hours. I like to make it in the morning before I go fishing. If you don't let it meld it will just taste like funky mayo......and nobody like funky mayo. You may never go back to tartar sauce.

HINT: a food processor makes this REALLY simple, just don't run it for more than 30 sec without letting it cool down or the mayo will separate.

EDIT: I forgot. Optional, 1 tsp extra hot horseradish

I used to make something like that with the addition of sweet pickle minced and a little Habanero. Thanx for the recipe ....Don
