Caught a trout last week among a nasty smelling algae die-off. Filleted it same day but didn't notice anything odd. However I went to cook it today and it had what my wife called a "grassy" smell. I agreed, but it was something more I couldn't put my finger on. As I fried the fish I got a whiff and remembered what the smell was. The flesh had the scent of the dead algae.

How long does it take trout in a lake to lose this kind of flavor?

I have noticed that Chabot trout usually have a "grassy" taste to it. I have caught them in the Winter and Spring, and they still had that flavor.

For me, I just soak the meat in a marinade, or make Hawaiian Lomi Trout to mask the flavor.
