Cabazon has to be the best, because of their diet, which is crab, abalone, and octopus, it imparts a great flavor to the meat, and it has a great texture.
The best way IMHO to prepare it is to bread it and season it with a little Old Bay and deep fry it in canola oil.

1) Ling (Although it's not considered a rockfish)
2) Vermillion
3) Blues

I've had cabezone before but dont distinctly remember what it tasted like. It's usually mixed in with other assorted rockfishes. I'll have to seperate it from the pack next time to see if it has a distinct flavor.

We try to avoid chinas and gophers, if they were taken in shallow enough water we'll let em go.

Favorite to fight or eat?

For the fight: lings, cabs, vermilion because they've got size & muscle. But I like catching suspended blues on light spinning gear too.

For eating, as you know, I'm no expert. If I didn't give so many fish away and eat more of what I caught, I'd probably be able to tell the difference. lol. So, no favorites at this time.

when out rockfishing all the fish go into one cooler and all the fillets go into one fry pan so I will say I like them all.But I will say a nice Cabazone fillet and an abalone steak from the same dive trip out rank rockfish

Wen i a fishing i target lings then the Vermillions. When i am diving nothing beats swimming in a school of big blues and getting a stringer full of them. What makes a great dive is crippling a few and letting them flop around on the bottom and then shoot the lings that come in to eat them.

A fun shallow water hunt(less then 10 ft) is a greeling hunt with a few black and yellows and big perch

I thought I had a good beer batter recipe that couldn't be beat. I swore by it. Until my Dad introduced me to this fish and chip batter called "Golden Dipt" made be McCormick. I usually keep a few boxes on hand. It is usually kept on the knee high stands in front of the fish counter with the cocktail sauce and tartar sauce. (Plus it feel pretty good when the fish monger offers to help you and I get to say "no thanks I got my onw ;)" Really convenient, just mix with water and perfect every time! Give it a try.

Cabezon are my favorite to eat with lings, vermillions, and olives close behind. The strength of cabezon and lings is amazing.
