    I agree, all the trout I’ve eaten from icy cold rivers and streams have been superb. Of course that might be because they are cooked in the beautiful outdoors by the river in frying pan or grill....

    I have found in general the older and larger fish and game are, they are not as tasty and the quality of the meat diminishes. Take for instance striped bass, the ones 18 to 25” are much better...

    Never seen anything like it. I think it is probably a rainbow with genetic pigmentation mutations. An oddity, a rarity, probably never see anything like it again.
