I made a most delicious dinner with 4 fresh trout fillets. I asked Tortuga to skin them. Then I mixed up a marinade with cumin, chopped garlic, salt, pepper, brown sugar, wine & fresh oregano. Put them in a large ziploc with the marinade for about 2 hours. Then opened one of those small jelly jars of Mole & scooped out about 1/3 of it into a frying pan. Mixed up 2 cups water with 2 tsp of chicken bouillon & simmered it with the mole. It made a great mole sauce. Next I added the fillets, covered them & simmered for about 5-8 min. We warmed up some tortillas & had rice with it. Yummy.
