Fishing has been good so looking for different recipes, thought this would be good and it was. *It was really easy and quick, less than an hour from start to eat.

The recipe calls for one can of tuna, I used three kokanee fileted and skinned, fried like to make tacos in olive oil, chile powder, garlic and seasoned salt. *Lightly saute about a cup of dice onions, two cups cheese, I used the already shredded kind, 4 eggs and two cups milk. *Mix together the 4 eggs and milk.


Flake the kokanee and spread out in the bottom of a nine inch baking dish, sprinkle the onions over the fish, spread the cheese over the onions and fish, pour the milk/egg mixture over the whole thing. Bake at 350 for 30-45 minutes or until the egg/milk mixture sets up (so its not wobbly)


It was delicious with fried taters and salad, hoping next week to try that crab cake recipe I heard of with kokanee, koke cakes ;)

Whoa!! Good idea. One of my customers makes killer quiche and always sends me home with some. Think I'll take her a couple of kokes... and your suggestions to make it. 8-)
