View Full Version : Pork and cheesy asparagus

This is good with pork or boneless skinless chicken breast, I like the pork best.

I pounded the boneless pork to tenderize it, then applied Hickory Garlic rub on one and Brown sugar rub on the other. On the Hickory Garlic piece I layered 3 pieces of Swiss cheese and 4 asparagus Spears, on the Brown sugar piece I used medium cheddar and 4 asparagus Spears. I tied these up like a mummy sleeping bag with butcher string, Topped them with slices of Pineapple and cooked in the oven at 325 for about 35 min, depends on the thickness of the meat.

Don't over cook this, you can press on the meat and get an idea when it's almost done, it should be firm, but you don't want it hard. The cheese and pineapple add some moisture and contrast. The butcher string is a pain if you use too much.

Looks great Roger. Was this a recipe or did you just feel like expanding the Raley's chicken recipe? I think some stove top stuffing in there might be good too!

I got the idea from the Raleys add Dave, but I bought the pork and asparagus at Save Mart. ;D As for the stove top I like that with the cream of mushroom soup, asparagus, and pork chops. ;)
