View Full Version : Liquid Smoke - easy shortcut or blasphemy?

I've never used or bought the stuff before. I've spent too much $ on my smoker and supplies to not use it. But after watching an episode of "Food Detectives" on the Food Network, 2/3 people couldn't tell the difference and prefered ribs made with LS over the real deal.

Have you ever cooked with it before? Eaten meat with LS in it? Good/bad?

I use it when I do my crock pot version of pulled pork. It doesn't replace real smoke by any means in my book. If short cuts were better, there wouldn't be all us smoker junkies. ;D It does a decent job of adding some smoke flavor when you can't do the real thing though.

There is no perfect substitute for smoking meats; at least I haven't found it.

Liquid is better than nothing, sometimes. ;)

I watched a show on making liquid smoke. It really is smoke caught in a liquid bath and then the liquid is reduced to bring up the potency.
