Can someone please give detailed step by step instructions on how to smoke a smaller fish. I have one of those bbq/smokers that look like a 55 gallon drum on its side with a 5 gallon bucket attached to one end. The fish are trout in the 12-14" range. I tried it once, but didnt work. Thankyou.

The size of your fish are on the small side for optimum smoking. Read this thread for a lot of "how to" help.

brine your fish first.

Once brined wash them off in water and let them sit on the BBQ screens without heat for at least an hour to form a white color on the outside of the fish. Smoke the fish on very low heat maybe 180 degrees maximum. The smoker should take at least two hours of smoking.

I have the same setup, Char Griller with the side fire box. There are a few modifications you can do to the Char Griller that will make it easier to control the heat. Don't trust the thermostat it comes with, they are 30 to 40 degrees off. If you need info on the modifications to the grill feel free to send a PM.

I guess Im looking more for how to use my smoker or the process of smoking rather than a recipe. I was hearing different stories about how long, where to put the fish in relation to the heat/fire, and what kind of wood to use or not.
I tried it with the fire in the little side part and the whole fish on the grill in the big part about 8" away from the opening to the fire. The whole time I could put my hand on the lid of the big part. I thought the smoke cooked it and not the heat???

yep, thats pretty much it. Mine is older, and the small part is on the left but same idea. I ll look at those sites tomorow.
