View Full Version : Cornmeal Crusted Trout or Catfish

Just tried this one tonight. Very good.

20 mins prep time
10 mins or less cook time ( Depends on the fillet size )


4 - 5 Trout / Catfish Fillets
1/3 C All Purpose Flour
1 Egg
1 Tbsp Water
1 C Yellow Corn Meal
1/4 C Nuts- Almonds or Pecans - Chopped fine
1 tsp Kosher Salt
1/4 tsp Black Pepper
1/4 tsp Paprika
1/4 tsp Ground Cumin
1/2 tsp Onion Powder
Vegetable oil for frying - 1/2 to 1 inch deep in frying pain


Beat the egg with the water in a shallow bowl.

Roll the fillets, one at a time, in the flour and shake off excess.

In a ziptop or small paper bag, combine cornmeal, chopped nuts, salt, pepper, cumin, onion powder and paprika. Shake to mix well.

Dip fillet into egg one at a time then place in cornmeal mix and toss to coat.

Fry fillets in oil 4 to 5 minutes a side. Or until the fillets are golden brown. Remember, since we are crusting the fillets they will continue to cook after you remove them from the oil.

Sprinkle with lemon or lime juice or eat straight up.
