View Full Version : Stuffed Rockfish Fillet

I was a little experimental when I got a pretty good sized rockfish. I cut a pocket into the fillet and filled it with a stuffing made out of:

Smashed shrimp (use a clever to pound it and chop it into a paste)
diced water chesnuts
parmesan chese
1 egg white
lemon zest
salt and pepper

Stuff the fillets and there was some left over, so I just dumped it on top. Bake at 400 for about 10 -12 minutes and then I broiled it for about 3-4 to get some color on it. I also baked it on a bed of lemon slices for flavor and to prevent sticking. It was good.
