Yes I know it is pretty hard to improve on anything so perfect as salted, smoked and fried pork belly, but my father told me to try it. I will never NEVER cook bacon in a pan again. He told me to grill the bacon. Oh my G-d, I have been ruined! It adds a grilled/double smoked flavor to already perfect food. It takes a little skill you need to have coals on only one side of the grill. Don't try to cook more than 6 slices at a time because you will have flare ups. When the grease starts to burn move the slices to the cool side of the grill. When the flames die out move the bacon back. It takes patience and a quick hand to avoid burning and keeping flare ups under control, but like I said I will never cook bacon indoors again.

The smell of bacon outdoors is second to none anyway. Sounds good!

Now if I could figure out how to keep the eggs from falling through the grate? :-/ ::) ;D
