View Full Version : Salmon in Puff Pastry

This is a very easy, very impressive way to cook salmon (and maybe trout?). Seen Tyler Florence do something similiar with phyllo, but I don't like working with that stuff, so I modified the recipe a bit to make it a little friendlier. One word...AWESOME! A must try!

2 tbsp. Dijon Mustard
2 tbsp. Olive oil
4 tbsp. fresh dill, chopped
4 - 4 oz. Salmon fillet pieces, about 3" wide (skin removed)
1 sheet Pepperidge Farm puff pastry, thawed
Melted butter

Mix mustard, olive oil, and 2 tbsp. dill together and brush over salmon. Season with salt and cracked pepper and set aside.


Unfold puff pastry and brush with melted butter. Sprinkle with remaining 2 tbsp. dill. Cut into 4 equal strips. Take a piece of the salmon and roll up in one of the strips (wienie roll-up fashion). Repeat with other 3 pieces. Move to a non-stick or greased baking sheet. Brush with melted butter (optional) and bake @ 350 degrees for 25 minutes or until fish is done.
