I've been looking for smoked salmon, but all I see in the stores is the Lox type which to me is just raw fish with a smoke flavor.

The kind I like is dry-smoked. The traditional Native American way to make it is to plank it and smoke it by a fire, usually on the beach where it was caught.

It's pretty easy to find in Western Washington, and I have even bought it at the Tillamook Cheese factory in Oregon.

Anyone know where I can find it in Sacramento?

I don't know if it is cooked by that same method but they have kippered salmon (hot smoked) at Whole Foods.

Around here (Reno), they have hot smoked salmon in plastic packets in the supermarkets (Scolari's, Raley's). It's usually at the end of the meat shelves, right with the cold-smoked packets. You can tell which is hot smoked, because it will be a thick piece, not sliced, and usually is dark in color. Sometimes covered with pepper.

Now I'm getting hungry again..... ::)
