View Full Version : Small Kokanee For Patties

What do you do with your stunted Kokanee from lakes like Pardee, Bullards Bar or Bucks Lake? Well, Bryan from Big Daddy Guide Service suggested I make Koke patties. Much like a crab cake.

Cook a limit or 2 of small Kokanee in butter and garlic wrapped in foil on the bbq. Let the meat cool down to the point you can pick all the meat off the bones.

Combine cooled meat with:
1 beaten egg
1/4 - 1/2 cup of Italian bread crumbs
Chopped Onions
Any of your favorite seasonings

Form into thin burger size patties and pat outside one more time in the bread crumbs

Put a couple TBSP of olive oil in a hot skillet and brown both sides of the patties.

These are delicious! They could be served numerous ways. Fish sandwich. By itself with a light salad. Or breakfast with potato pancakes. My wife likes to make a big batch and freeze the patties for quick meals.

That is the same thing I do with left over salmon. I add a little corn meal along with the bread crumbs though.

And when I make these with salmon, I add corn niblets and chopped canned chilis. I bet that would go just fine with kokes, too!
