View Full Version : A Special Way to Fillet a Sturgeon?

I've been fishing sturgeon for quite a few years now, and have always taken them to be smoked at a local shop. However, I want to fillet my next catch.

I've heard from many people that there is a certain way to fillet a sturgeon than any other particular fish. Namely a detail about not cutting any bones and removing the skin or else the sturgeon will obtain a very fishy smell that is distasteful.

Could anyone lend an insight how to fillet a sturgeon? Any help would be appreciated.
