As a white meat fish, striper is very mild. The red section holds a strong taste that ruins the flavor of the meat, in a lot of our opinions. ;)

For those that eat mackerel and sardines, what's a little red meat going to do to you? But it's supposed to accumulate toxins in that red meat. :P
