View Full Version : Kens original Jerk BBQ pork steaks *

This is an "original" recipe I developed for the fish BBQ, for those who don't like fish and for when the fish is all gone...

From a big family pack of pork shoulder steaks (thicker is better, like 3/8 inch),
Rub a little dark soy sauce on both sides and pack in a ziplock bag overnight (or at least 2 hours).

Start up the BBQ (wood chips totally acceptable).

Sprinkle a little garlic powder on both sides of the steaks.

Sprinkle plenty of Carribean Jerk Seasoning (McCormicks is good) on both sides and BBQ. Optional; *add a little ancho chile powder or a little cayanne pepper for some added heat.

I like crunchy fat so about 5 to 7 minutes a side on direct heat, moving it around to cook evenly.

Season with salt and black pepper after you pull it off the coals (not very much as the soy sauce is salty).

If you slice this up it makes killer fajitas for tacos,
but my favorite is with mashed potatoes and BBQ corn on the cob, along with the cajun blackened trout, and maybe some red beans and rice, and some greens, and *salad... No one goes away hungry! ;D
