Being a fishing board, we all have smoked fish and I'm sure we have our favorite recipe, this is mine and it's very simple.

1 cup soy sauce
1 cup white wine
1 whole lemon, sqweezed and thrown into the brine

let the fish soak for atleast 4 hour in the refrigerator.
Take it out of the brine and put it dry.
If you like your fish a little sweeter, you can rub some brown sugar and cracked pepper on it before you smoke.
