have seen the link on how to fillet a sturgeon. Plan to take mine to a local fishhouse to be smoked, so i was thinking of just gutting it and cutting the head off, like a salmon to avoid the hassle of skinning it. someone told me that if you get the juice from the spinal cord on the meat it will sour it. true? also, was told that sturgeon need to be bled. is this true, and what's a humane way to do it? i'm used to just bonking a legal fish and gutting it to keep the meat edible. thanks. :D ;D :D

As far as bleeding it goes you can just cut a gill or 2 so it will pump itself dry. That way when you go to cleaning you dond have a big bloody mess on your hands.
