Does anyone out there know how to cure salmon roe?
I have about 3/4 Lb and would like to cure it for eating.

As for Cureing for bait I would get a shaker of Pro-Cure, but eating I don't think you have to cure it but if you did I would say all you needed was salt but if you use salt it will suck the moistness out of the eggs so I would say sprinkle a little salt and eat away.

i eat salmon roe at my sushi joint, so i know it can be done. i've tried a couple times with disasterous results. let me know if you have any success because i always feel terrible feeding it to the gulls.

My wife makes caviar which, IMHO, blows away any of the store bought stuff that I have ever eaten. Unfortunately that also means that I have to give up half of everything that I get to her. Ah, such is maried life...

I'll try to get her recipe and post it. It is very time consuming picking each individual egg off the membrane but as long as she does it I can't complain. I know that it involves soaking the separated eggs in warm salt water, draining and then adding a little sugar and oil.
