i am looking of a recipe for smoked striper and some tips on how to smoke. i have the basics down for smoking but everybody i talk to says you can dry it out realy fast. so any recipe and tips would be great..

Every smoker is different, and many really don't deliver consistent temperature control. Striper isn't really oily, it's not like salmon or lake trout, so it will easily dry out too much if it's smoked for too long, or at a higher temp. It's also a milder flavored fish, so you can probably stick with a simple brine. A brine really can be as little as water, non iodized salt, and sugar, or as many ingredients as you want. Since striper isn't really strong tasting, I'd probably go with apple wood. Experiment, keep notes of what and how you do everything, and you should be successful
