Just one way to cook your catch, easy and turns out real nice.

Soak your fillets in buttermilk overnight. When you ready to cook, put them in a collander to drain while you mix up your breading, and heat your oil.

1 cup corn meal
2 tsp Chacerre's Creole Seasoning
1 tsp fresh ground pepper, I like the green peppercorns
1/2 tsp each of onion powder, and garlic powder.

Mix dry ingredients together, put it on a pie pan or plate.

Put about an inch of oil (depending on the thickness of the fillets) in a dutch oven or frying pan, heat to 350 degrees. If your oil is too hot, they will brown before they are cooked through, so use a thermometer.

Do not rinse the fillets, cut them into 2" wide strips, lightly slat them, then, roll them in corn meal to completely cover them. Carefully add to hot oil, and fry about 3 minutes on a side. When the meat stops bubbling furiously, its getting close. Drain on a rack, over pan or a brown paper bag.

Dipping sauce, easy to make

Catsup, about a 1/4 cup.
Few shakes of your favorite hot sauce.
1/2 to 1 tsp horseradish, depending on your taste.
Mix and dip!

These recipes are fast, easy, and less then 5 ingredients. Anymore then that and I can't remember them!
